Ingredients

 

110g eggs

45ml white wine vinegar

10g sugar

140g shallots

3 cloves garlic

3g cayenne chilli powder

70ml REDUCED Vegetable 021

6,6dl rapeseed oil

2g salt

Method
  1. Finely slice the shallots and the garlic
  2. Heat the oil up to 140°C in a small pot. Add the sliced shallots and garlic and cook until golden.
  3. Blitz the oil with the cooked shallots and garlic, then strain and save it in a container.
  4. Place the eggs, white vinegar and sugar in a jug. Start blending with a stick blender, adding the oil step by step.
  5. Once you are out of oil, incorporate the REDUCED Vegetable 021 progressively.
